So I found a Power Player 3 (76000 in 1!), t's one that look exactly like the one over at ladyada.net/make/gamegrrl/make.html. Upon receiving it in the mail this morning I took everything apart. Much to my dissatisfaction, It doesn't have enough pins, nor does the NOAC have enough pinouts. Check it out:
NES cart, DIP connector that is correct size, and Power Player.

Back of (or front?) on NOAC.
Controller board only has a gloptop chip and button pads and there's an extension for a 2nd player/light gun. Other than that, this is what I have. Is there no hope to make a portable with it?
On an after thought, if I could try to find a flash drive that uses the same flash chip that it has on board I could technically interface a usb drive on to it to remove and re-manage the ROMs on board...

I believe you need a 60 - 72 pin converter thing.
But NOAC's which have internal games usually have problems reading game carts.

So I googled the convertor and a bunch of things came up. Does anyone know of a reliable site?
Or just have a schematic showing which pins go where since I already have a DIP socket?

just get the pinout from Ben's download page and hardwire a 72 pin slot to it.
