IIRC, it will disable the games while a cart is plugged in, not when you wire the 72 pin cart connector.
In G-force's Nes Boy (I think thats what its called) he disabled the games by connecting pin 1 and 31. I'm not sure of the exact pin numbers but its somewhere around there.

Hmm. It looks like that ribbon cabe might have been attached to the audio, video, and power board....
If you can figure out which pin is ground, then through some testing you can probably figure out the rest of the pinouts.
For example, once you found ground try looking for the +5v and video, etc...
