I upgraded my xbox with a 320gb WD HDD (to replace a 160gb WD drive ), and I used this guide with extreme ease:

Yes, you can use a USB to XBOX plug to use an external drive. How I would recommend transferring files is to get every file you would need together and have them in one place. I would not recommend putting Linux on one bank and putting a dashboard on the other.
