It's 7" .... to big.
It's 16:9 widescreen and not 4:3 not the same as the PS1

I don't know that it would be too terrible. There are a few N64 games with a widescreen option, and though this screen is quite a bit bigger than a lot of other portable screens, it's still small enough that the widescreen "stretch" might not bother you too bad. And it's cheap-ish. It is a pretty big screen though, but if you should happen to be building a sort of "laptop" style device, why not go for a bigger screen?
But... if you're having trouble finding a PSone screen, check Ebay for a Zenith Xbox, Gamecube, or PS2 screen. They are exactly the same as a PSone screen, but you can still get them brand spankin' new, still in the box for about the same price as that 7 inch monster. I guess people haven't figured out it's the same screen yet, because of how much cheaper they tend to be.

I built my Wireless Video Interface with similar screen but MUCH better resolution 800x480.

Few things about the above screen:
1. 800x480 resolution. Looks really good even with composite video
2. Can run off 7.4V no problem.
3. Top viewing angle is kind of small (about 25 degrees)
It has 4:3 option so you can enable via menu.
